WHITE FRUIT CAKE 
2 lb. dates or 1/2 lb. pineapple and 1/2 lb. green candied cherries and 1 lb. dates
1/2 lb. Brazil nuts
1/2 lb. pecans
1 lb. walnuts
1/2 tsp. salt
1 1/2 c. sugar
1 tsp. vanilla
2 c. flour
1 tsp. baking powder
1/2 c. cherry juice
3 tbsp. melted shortening
4 eggs, well beaten
1 lg. jar maraschino cherries (save juice)

Sift dry ingredients. Mix in nuts and fruits. Add cherry juice and vanilla. Blend in eggs and shortening. Bake in 2 greased loaf pans at 300 degrees for 1 1/2 hours. Maybe an additional 10 to 15 minutes.

Kaye says she often divides the batter into small loaf pans, about 6 or 8 loaves, ties a pretty bow on top and gives as a hostess gift during the holidays.

All fruit and nuts are whole - no dicing or chopping.
