IRISH SODA BREAD | |
4 c. sifted flour 2 tsp. baking soda 2 tsp. salt 2 tsp. sugar 1 1/4 tsp. caraway seeds 1/2 c. dark seedless raisins 1/4 c. chopped peanuts 1 1/2 c. buttermilk 1 tbsp. milk In large mixing bowl mix together flour, baking soda, salt, sugar and caraway seed, raisins, chopped peanuts. Make a hole in dry ingredients mixture and pour in buttermilk, mixing from the sides to form a ball of dough. Turn out onto floured board and knead about 5 minutes. Shape into a ball. Place on ungreased baking sheet. With a sharp knife, make a shallow cross shaped slit across the top of the loaf. Brush with milk. Bake at 400 degrees for 50 minutes or until done. Makes 1 loaf. |
