OKRA AND TOMATOES 
1 lb. fresh okra
3/4 c. chopped onion
1/4 c. chopped green pepper
2 cloves garlic, minced
2 tbsp. vegetable oil
2 ripe tomatoes, peeled and coarsely chopped
1/2 tsp. salt
1/2 tsp. pepper
1/4 c. water
Dash of hot sauce, optional

Wash okra and drain. Remove tips and stem ends. Cook onion, green pepper, and garlic in oil in a large skillet over medium heat, stirring constantly: add okra and remaining ingredients. Bring to a boil; cover, reduce heat, and simmer 25 minutes, stirring occasionally. Yield: 6 servings.
