PASTA WITH RED CLAM SAUCE
PASTA:

3/4 box pasta (any kind will work, linguini works best)
1 tsp. salt

Fill large pot with water. Add salt. Bring water to boil. Add pasta. Cook for 8 to 10 minutes or until pasta is tender. Pour into strainer, strain well.

SAUCE:

2 cans minced clams (drain clam juice into separate bowl and save for sauce)
1 bottle clam juice
2 tbsp. olive oil
3 cloves garlic, minced
1/4 cup minced shallot
1/4 cup marinara sauce
1 tsp. crushed red pepper (for spicy taste - optional)

Add olive oil to medium saucepan. Add minced garlic and shallots. Add drained clam juice from cans. Add one whole bottle clam juice. Add marinara sauce. Add crushed red pepper (if desired). Bring to a boil. Lower heat to simmer for 10 to 15 minutes. Add minced clams until heated.

TO SERVE:

fresh chopped parsley
1 lemon and/or 1 lime, cut into slices
fresh grated Parmesan cheese

Add desired amount of pasta from strainer to sauce. Pour into serving bowl. Sprinkle with fresh chopped parsley, fresh lime and/or lemon juice, and fresh grated Parmesan cheese.
