TINY CHEESE CAKES 
2 (8 oz.) cream cheese pkg.
3/4 c. sugar
2 eggs
1 tbsp. lemon juice
1 tsp. vanilla
Vanilla wafers (cookies)
Cherry pie filling (canned)
Foil cupcake liners (paper liners okay, too)

Soften cream cheese by setting near oven, mix together cream cheese, sugar, eggs, lemon juice and vanilla with electric mixer for 4 minutes (okay if still a little lumpy).

Place vanilla wafer in bottom of foil cupcake liner, pour over cheese cake mixture until liner is about 1/2 filled.

Place in oven at 375 degrees for 15 to 20 minutes or until firm. Then cool. Spoon cherry filling over tiny cheese cakes and refrigerate. Makes about 2 dozen.
