PORK CHOPS MEXICANA | |
6 rib or loin chops, cut 3/4 to 1 inch thick 1 tsp. salt 3/4 c. uncooked rice (not instant) 1/2 pkg. taco seasoning mix (1 1/2 to 2 1/2 tbsp.) 1 (8 oz.) can tomato sauce 1 1/2 c. water 1/2 c. shredded Cheddar cheese 1 green pepper cut into 1/2 inch rings Brown chops and arrange in a 9x13x2 inch baking dish. Season with salt. Sprinkle rice around chops. Combine taco seasoning mix, tomato sauce and water. Pour this mixture over chops and rice. Cover tightly with aluminum foil. Bake 1 to 1 1/2 hours depending on thickness of chops. Remove from oven 10 minutes before done. Sprinkle cheese and arrange green pepper slices over surface of chops and rice. Cover and cook another 10 minutes. Serves 6 people. |
