CINNAMON-APPLE SWEET POTATOES 
4 med. sweet potatoes
1 1/2 c. finely chopped apple
1/2 c. orange juice
1/4 c. sugar
1 1/2 tsp. cornstarch
1/2 tsp. ground cinnamon
1/2 tsp. grated orange peel

Wash sweet potatoes, prick with a fork. Place on paper towel and cook on High in microwave 10 to 13 minutes or until tender; turning halfway through cooking. Set aside. Combine remaining ingredients. Cover and cook on High for 3 minutes. Stir mixture, then cook, uncovered on High 1 1/2 to 2 1/2 more minutes or until sauce is thickened. Slit sweet potatoes and spoon sauce over each one. Makes 4 servings. NOTE: Sauce can be made ahead and reheated at serving time.

Since microwave ovens vary in power, you may need to adjust your cooking time.
