GLAZED APPLES WITH SWEET
POTATOES
 
2 lg. apples
4 med. sweet potatoes
1/2 tsp. salt
2 tsp. lemon juice
3 tbsp. butter
1/2 c. molasses
1/4 c. brown sugar
1/4 c. chopped nuts

Boil sweet potatoes until tender, but still firm and allow to cool. Then peel, slice and place potatoes in a casserole dish. Peel and slice apples and sprinkle with lemon juice. Fry apples in hot butter until slightly soft; arrange apple slices in dish with potatoes. Add molasses to butter in pan and bring to boil. Pour over casserole. Sprinkle with brown sugar and nuts. Bake at 325 degrees for 30 minutes. Serves 4-6.
