RUM GLAZED SWEET POTATO APPLE
DISH
 
3 lbs. sweet potatoes
3 lbs. apples, peeled and cut into 1/8ths and tossed with 1/4 c. lemon juice

Bake until tender, cool. Heat in saucepan and mix well: 1/4 c. brown sugar 1/4 c. honey 2 tbsp. rum 1/2 tsp. cinnamon 1/4 tsp. ginger 1/4 tsp. mace

Peel potatoes and cut into 1/4 inch slices. Arrange with apples in 14 inch gratin dish. Spoon sauce over. Bake at 350 degrees for 30 minutes.
