LEMON LAVA MINI CAKES | |
When cooked, a custard forms on the bottom and the cake is on top! 2 tbsp. butter 1 cup sugar 4 tbsp. flour 1/4 tsp. salt 5 tbsp. fresh lemon juice rind of 1 lemon, grated 3 eggs, separated 1 1/2 cups milk Preheat oven to 350°F. Cream butter; add sugar, flour, salt, lemon juice and rind. Stir in beaten egg yolks and milk. Fold in stiffly-beaten whites and pour into greased Pyrex custard cups. Place in a pan of hot water in oven and bake at 350°F for 45 minutes. Submitted by: CM |
