BEEF ENCHILADA STACKS 
1 lb. ground beef
1 sm. onion, chopped
1/4 c. green pepper, chopped
2 cloves garlic, minced
1 (10 oz.) can enchilada sauce
1 (2 1/4 oz.) can sliced olives
Salt & pepper
12 corn tortillas
1 lb. Jack or cheddar cheese
Sour cream
Chopped green onion
Ripe black olives

Brown beef in large skillet over medium high heat. Add onion, pepper and garlic; continue to cook until vegetables are tender. Stir in enchilada sauce, sliced olives and salt and pepper to taste. Lower heat and simmer, uncovered about 20 minutes.
