HASH BROWN CASSEROLE 
2 lb. bag hash browns, thawed
2 c. sour cream
1 can cream of chicken soup
1 c. shredded Cheddar cheese
1/2 onion, chopped
1 tsp. salt
1/2 tsp. pepper

TOPPING:

1/2 c. melted butter
3/4 c. crushed Ritz crackers

Mix all ingredients together. Put in 9x12 inch baking pan. Mix butter and crackers and spoon on top. Bake at 350 degrees for 1 hour.
