RED BEANS & RICE | |
1 lb. dry red beans 6 c. cold water 6 c. hot water 1 lb. ham hocks 1 c. chopped onion 2 cloves garlic, minced 1 bay leaf 1/4 to 1/2 tsp. red pepper 1 lb. smoked sausage 1/2 lb. hot sausage Soak red beans in cold water overnight. Combine beans, hot water, ham hocks, onion, garlic, bay leaf and red pepper. Bring to boiling; reduce heat, cover and simmer for 2 1/2 hours or until beans are tender, adding more water if necessary; and stirring occasionally. Remove ham hocks, cut meat from bones and add to mixture. Add sausage. Boil gently, uncovered, 15 to 20 minutes more or until a thick gravy forms. Serve over rice! |
