LOUISIANA RED BEANS AND RICE 
1 lb. kidney beans
1 lb. smoked sausage (or ham)
1 pkg. onion soup mix
1 lg. onion
Salt and pepper to taste

Brown sausage or ham and onion. Rinse and sort beans. Put in large pot and cover well with water. Add sausage mixture; cook over medium heat for 1 to 2 hours adding water and stirring as needed. When beans are soft, add remaining ingredients. Serve over cooked rice.
