CORNMEAL - PERSIMMON CAKE 
1 c. cooked persimmons
3/4 c. cornmeal
1 c. flour
1 1/2 tsp. baking powder
3/4 c. honey
2 eggs
1/2 c. milk
1/2 tsp. vanilla
1/4 tsp. salt
2 sticks (or 1 c.) of butter

Cream the butter and honey and add vanilla and eggs. Stir thoroughly. Add the drained persimmons and rest of ingredients and stir together. Butter or grease an 8 inch square pan and put ingredients into it. Place in a preheated oven of 360 degrees and bake until a toothpick in the center will come out clean. Cooking times will be between 20 and 30 minutes. Let cool. Can be served with or without whipped cream topping.
