“NUT BRITTLE” IS IN:
NEXT RECIPE:  OLD TIME HARD CANDIES

NUT BRITTLE 
1 cup granulated sugar
2 cups brown sugar
1 cup dark corn syrup
1 cup water
1 tablespoon butter
1/2 pound shelled peanuts or cashews

In a heavy-bottom saucepan, boil sugar, syrup and water until it reaches 285°F (medium crack stage). Add butter and peanuts/cashews when nearly done. Remove from heat and pour hot mixture onto a well buttered baking sheet and spread thinly with a metal spatula.

Allow the brittle to cool and harden completely.

After the brittle cools, break into 3 inch pieces (use a hammer or mallet).
