MACADAMIA NUT BRITTLE 
l 1/2 cups (9 oz.) whole macadamia nuts
6 Tbsp. salted butter
1 cup white sugar
1/4 cup water
1/4 tsp. baking soda
1 tsp. vanilla extract

Spray a 9x13-inch pan or glass dish well with non-stick spray (or brush with vegetable oil).

Spread Macadamia nuts evenly across the bottom of the pan.

In a heavy bottom saucepan, stir together butter, sugar and water, stirring until butter melts and sugar dissolves. A wooden or high-heat silicone spoon or spatula is best. After mixture has melted together, stop stirring.

Cook over high heat (no stirring!) until mixture begins to turn a golden brown. Remove pan from heat and add baking soda and vanilla, stirring well.

Immediately pour contents into pan over the Macadamia nuts. Spread evenly with the back of spoon if needed.

CAUTION: Mixture is very HOT and will cause burns if touched.

Allow to cool thoroughly, then break up into pieces (use a mallet or hammer if needed). Crumbs can be used as a topping for ice cream. Store in an air tight container.

This recipe makes about a pound of brittle. You may substitute cashews, peanuts, or almonds.
