NUT BRITTLE (Microwave) 
1 c. sugar
1/2 c. water
1/2 c. light corn syrup
1 jar (7 oz.) unsalted dry roasted peanuts
3/4 c. shredded coconut
1 tsp. vanilla
1 tsp. baking soda

In a 2 quart casserole, stir together sugar, water and corn syrup. Microwave on high for 12 minutes. Stir in nuts and microwave on high for 4 minutes or until light brown. Stir in coconut and microwave for 1 minute. Add vanilla and baking soda, stirring until light and foamy. Pour mixture onto a lightly greased cookie sheet; spread to 1/4 inch thickness. Cool and break into pieces. Yields: 1 pound of candy.

Since microwave ovens vary in power, you may need to adjust your cooking time.
