COTTAGE BREAD PUDDING 
8 slices enriched white bread
3 tbsp. butter
1 c. cottage cheese
1 c. applesauce
1/2 tsp. cinnamon
2 eggs
2 c. milk
1/4 c. sugar

Spread bread with butter. Place 1/2 the slices in greased baking dish. Spread with cottage cheese. Cover cheese with applesauce. Top with remaining bread, buttered side up. Sprinkle with cinnamon. Beat eggs lightly with milk and sugar. Pour over bread. Let stand 10 minutes, then bake at 375 degrees until firm and delicately browned. Serve warm. Makes 8 servings.
