CORN MOUSSAKA | |
1 (17 oz.) can whole kernel corn, drained 1 1/2 lbs. lean ground beef 1 tbsp. flour 1/2 tsp. garlic powder 1 (8 oz.) can tomato sauce 1/4 tsp. cinnamon 2 slightly beaten eggs 1 1/2 c. cottage cheese 2 tbsp. fresh chopped chives 1/4 c. Parmesan cheese 1 c. Cheddar cheese Spread corn in a shallow 1 1/2 quart baking dish. Brown beef, drain fat. add flour, cook 1 minute. Stir in sauce, garlic and cinnamon, then pour over corn. Bake 15 minutes at 350 degrees. While this is baking, mix cottage cheese, chives and eggs. Spread over baked mixture and spread cheeses on top. Return to oven and bake 15 minutes more. |
