EILEEN'S ZUCCHINI BREAD | |
3 eggs, beaten 1 c. oil 2 c. sugar 1 tsp. vanilla Mix well. 3 c. flour 1 tsp. salt 1 tsp. baking powder 1 tsp. baking soda 2 tsp. cinnamon Mix and add to egg mixture. Add 2 cups grated zucchini at end or 1 1/2 cups canned pumpkin - 1/2 cup raisins, 1/2 cup nuts. Bake at 325 degrees for 60 minutes in 2 greased loaf pans. (Allentown-Trinity) |
