VIDALIA ONION RELISH 
16 med. Vidalia onions
1/2 c. salt
4 1/2 c. sugar
1/4 gal. apple cider vinegar
1 tsp. turmeric
1 tsp. pickling spice
1 tsp. pimento, chopped

Grind enough Vidalia onions to yield 1 1/2 gallons. Add 1/2 cup salt and let stand 30 minutes. Squeeze juice from onion-salt mixture and discard juice. Mix all other ingredients together. Add onions. Bring to boil and simmer for 30 minutes. Stir often. Dip up into jars. Seal, process 10 minutes in a boiling water bath.
