HOLIDAY BRUNCH CAKE 
2 1/2 c. flour
2 c. sugar
3 eggs, room temperature
3 c. grated apples
1/2 c. raisins
1/2 c. nuts
1 tsp. vanilla
1 c. corn oil
1 tsp. salt
1 tsp. baking powder
1 tsp. baking soda

Mix dry ingredients together. Add oil, eggs, vanilla, and blend well. Pour in tube pan. Bake at 350 degrees for 50 minutes.

FROSTING:

1 c. chopped nuts
1 box confectioners sugar
1 (8 oz.) pkg. cream cheese
1 stick butter
1 tsp. vanilla

Cream the cheese and butter. Add sugar, vanilla, and nuts. Blend well. Dribble down sides. Decorate with cherries. Best if set overnight.
