SMOKED SAUSAGE IN APPLE JUICE 
2 tbsp. butter
1 green pepper, sliced into strips
1 med. onion, sliced
1 c. apple juice
1 lb. beef smoked sausage, cut into 4 inch pieces
5 hot dog buns

In a skillet (with cover) melt butter, add green pepper and onion. Cook until lightly browned. Add apple juice and sausage. Cover and cook 15 to 20 minutes, or until heated through. Serve in hot dog buns.

This recipe may be served over rice. However, the liquid should be thickened with about 1 tablespoon of cornstarch before serving.
