SPANISH RICE 
1/2 lb. ground beef
1 c. onions, chopped
1 green pepper, diced
3 1/2 c. tomatoes and juice
1 c. celery, cut up
1 c. rice
1 sm. can tomato sauce
1/2 tsp. salt
2 cloves garlic or 1/2 tsp. garlic salt, optional

Put rice, garlic, green pepper and meat in skillet at medium heat, stir and cook about 5 minutes or until meat is browned. Then add tomatoes, tomato sauce, celery and seasonings. Cover (do not stir) and cook about 20 minutes, or until rice is tender. If it gets dry, add some water.
