TACO CASSEROLE 
1 1/2 ground turkey or chicken
1 med. onion, chopped
1 (8 oz.) tomato sauce
1 pkg. taco seasoning mix
1 (8 oz.) bag taco chips
1 (12 oz.) cottage cheese
1 (8 oz.) sour cream
2 med. tomatoes, chopped
1 can sliced ripe olives
2 c. shredded Cheddar cheese

Brown meat and onion in skillet. Drain grease. Add tomato sauce and taco mix to meat. Crush taco chips and place in greased 13x9x1 inch pan. Place meat mixture over chips. Top with remaining ingredients in order listed. Bake uncovered at 350 degrees for 35 minutes. I add a little more cottage cheese and sour cream than what the recipe calls for. Enjoy.

I made this for myself and my elderly mother. We both loved it. I am going to try freezing the casserole. It makes more than we need. Although this time we did eat it all as leftovers. It actually tastes even better the next day. I did use more of a lot of the ingredients when I made mine. Also the next time I make it I am going to try to change it some by mixing more of the ingredients together, I will let you know how I change it and how it turns out when I try that. Thank you for this Great recipe. If I rated it on a 5 star rating I would rate it at 4.5 or 5 stars. I certainly plan to make this often here at our house. We ate ours with a salad, some garlic bread and on some nights we also had corn. All I can say is Yummy from myself and my mother. She is 90 years old and has the appetite of a horse. Looking forward to more great recipes to try.
