SEAFOOD CASSEROLE 
4 c. cooked rice
1 c. mayonnaise
1 c. V-8 juice
1 c. shrimp (6 1/2 oz.)
1 c. crab (6 1/2 oz.)
1 stick butter
1/4 c. slivered almonds
4 c. fresh bread croutons
Salt, pepper, and onion powder to taste.

Imitation seafood is very good, also.

Mix first 5 ingredients together. Melt 1/2 stick butter; toss almonds and 2 cups bread cubes. Melt the rest of butter and toss remaining bread cubes. Mix 1/2 of croutons with seafood mixture and put into casserole dish and top with other 1/2 of croutons. Bake in 300 degree oven long enough to brown croutons, about 30 to 40 minutes.
