CHICKEN WITH APPLES AND ONIONS 
6 skinless chicken breast halves
1 c. sliced onion
1 tbsp. olive oil
2 c. sliced tart apples
1 tbsp. butter
1 1/2 c. apple juice
2 tbsp. honey
1/2-1 tsp. salt

Preheat oven to 350 degrees. Place chicken breasts in a shallow baking pan. In a skillet, saute onions in olive oil until tender. Add apples and saute for 1 more minute. Pour onions and apples over chicken.

Melt butter in a small saucepan. Combine apple juice, honey, salt and butter; pour over chicken and vegetables. Bake for 45 minutes or until chicken is cooked through. Serves 6.

May want to double marinade and thicken with cornstarch or flour to make a thicker gravy for the chicken or for potatoes, rice or other veggies. Basic recipe from "Eater's Choice, A Food Lover's Guide to Lower Cholesterol".
