KENTUCKY POUND CAKE | |
2 1/2 c. self-rising flour 2 c. sugar 1 1/4 c. oil 1 sm. can crushed pineapple, drained 5 egg yolks 2 tsp. hot water 1 1/2 tsp. cinnamon 1 c. chopped nuts 5 egg whites, stiffly beaten GLAZE: Juice from pineapple 1 1/2 c. powdered sugar Mix sugar, oil and egg yolks. Add hot water, cinnamon and flour. Add chopped nuts and pineapple. Fold in egg whites. Bake 1 hour 10 minutes at 350 degrees. After cake is done mix pineapple juice and powdered sugar, pour over warm cake while in pan. Let cool 10 minutes, turn cake out, then over. |
