BARBARA'S CHICKEN 
4 whole chicken breasts, halved & boned
1 beaten egg
Plain bread crumbs
Oil or butter for frying
1/2 lb. fresh mushrooms, sliced or 1 (8 oz.) can
White pepper
2 c. chicken broth
2/3 c. dry sherry
2 tbsp. cornstarch
Parmesan cheese
8 oz. pkg. Mozzarella cheese slices

Dip chicken in egg and roll in crumbs. Fry until brown; arrange in shallow baking dish. Saute mushrooms; add pepper, broth and sherry. Thicken with cornstarch. Sprinkle lots of Parmesan cheese over chicken and cover with Mozzarella slices. May be made ahead to this point. Pour gravy over all and bake at 350 degrees for 30 to 40 minutes.
