EASY CHICKEN ENCHILADAS 
1 med. onion, chopped
1 garlic clove
2 tsp. butter
1 can cream of chicken
8 oz. sour cream
2 tbsp. flour
3 chicken breasts, cooked and cut into strips or shredded
8 to 10 flour tortillas
1 c. shredded sharp Cheddar cheese

Preheat oven to 350 degrees. Brown onion and garlic clove in butter until tender. Mix flour into sour cream. Add to onions. Stir in cream of chicken soup. Cook to a boil, stirring to prevent sticking. Add 1/2 of cheese and chicken. Warm tortillas in microwave or oven. Spoon chicken mixture into tortillas and wrap. Lay seam side down in casserole dish. Spoon remaining sauce and grated cheese on top. Cook for 15 minutes.

Since microwave ovens vary in power, you may need to adjust your cooking time.
