BAKED MACARONI AND CHEESE | |
1 (16 oz.) box macaroni noodles 2 eggs 1 lb. mild cheddar cheese, grated 1 lb. sharp cheddar cheese, grated CHEESE SAUCE: 2 tbsp. all-purpose flour 2 tbsp. butter 2 cups milk 2 tbsp. ground mustard 1 lb. Colby Jack cheese, grated Boil noodles till they are almost done. Drain noodles and let them cool down while you make the sauce. For the cheese sauce, cook flour and butter on medium-high till it is cooked (golden brown with a nutty smell) then turn the heat to low. Slowly add in milk while stirring it with a whisk so it wont clump. Add mustard. Let it thicken to just about a gravy consistency then add Colby Jack cheese. Put noodles in a medium foil pan or casserole dish that is deep. Scramble two eggs and add them raw to the noodles - stir them in good. Add mild cheddar cheese, stir well then add your cheese sauce and stir it through. Top with sharp cheddar cheese. Bake uncovered at 350°F for 45 minutes to an hour. Submitted by: Julie Campbell |
