PUMPKIN CAKE | |
CAKE: 4 eggs 1 2/3 c. sugar 1 c. oil 1 (16 oz.) can pumpkin 2 c. flour 2 tsp. cinnamon 1 tsp. salt 1 tsp. baking soda 2 tsp. baking powder FROSTING: 1 (3 oz.) pkg. cream cheese 1/2 c. butter 1 tsp. vanilla 2 c. confectioners' sugar Mix cake ingredients until blended thoroughly. Bake in greased and floured pan at 350 degrees 30-40 minutes, depending on pan size. You may use a 9x13 inch or 10x15 inch pan depending on whether you prefer a cake-like dessert or more of a pumpkin bar. Cool. Frost with cream cheese frosting. Store in refrigerator. 12 servings. |
