ROAST POTATOES 
4 med. potatoes, cut in wedges
1/2 c. butter, melted
1 sm. clove garlic, peeled
1/4 tsp. pepper
Dash of salt

Put potatoes in large bowl of ice water. Cover and chill 45 minutes. Preheat oven to 475 degrees. Drain potatoes and pat dry. Put in 9 inch baking dish. In small bowl combine butter, garlic, salt, and pepper and pour over potatoes. Stir to coat. Bake 40-45 minutes until browned, crisp and tender on the inside. Stir occasionally.
