SQUASH CASSEROLE 
2 c. cooked squash
1/2 stick butter, melted
1 sm. onion, chopped
1 c. Ritz or Town House crackers, crushed
1/2 c. milk
1 egg, beaten
Salt, pepper to taste
1 c. grated Cheddar cheese

Mix all ingredients except cheese. Pour into a buttered casserole. Place cheese on top. Bake in a 350 degrees oven for 40 minutes or until bubbly. (Asparagus or eggplant may be substituted for squash.)
