SWEET POTATO PIE 
3 lg. sweet potatoes, quartered
3 tbsp. butter
1/2 c. hot milk
2 eggs, separated
1/2 c. sugar
1/2 tsp. salt
1/4 tsp. ground nutmeg
3 tbsp. brandy
1 unbaked 9 inch pie crust
1 tsp. grated orange peel

Boil sweet potatoes until tender. Peel and place in mixing bowl and mash until smooth. Melt butter in hot milk. Add to sweet potatoes and beat until soft and creamy.

In another bowl, beat egg whites until stiff and set aside. Beat egg yolks until light. Add sugar, salt, nutmeg, orange peel and brandy, then add to sweet potato mixture, mixing well. Fold in beaten egg whites and pour mixture into pie crust. Bake at 350 degrees for 45 to 50 minutes or until knife inserted in center comes out clean.
