SWEET POTATO PIE 
3 lg. sweet potatoes
1/4 c. butter
1/2 c. canned evaporated milk
2 eggs, separated
2/3 c. sugar
1/2 tsp. salt
1/4 tsp. nutmeg
1 tsp. vanilla extract
3 tbsp. brandy (optional)
1 (9-inch) unbaked pie shell

Boil sweet potatoes until tender. Peel and mash. Melt butter in milk and add to sweet potatoes. Mix it well. Beat egg whites until stiff and set aside. Add yolks and remaining ingredients to potatoes. Gently fold in egg whites. Pour a little into pie shell and bake at 350 degrees for 30 minutes or until toothpick inserted in center comes out clean.
