RACHEL'S SWEET POTATO PIE 
3 eggs
4 tbsp. butter
1 tbsp. vanilla
1 c. milk (I use canned milk)
1/2 c. sugar
2 c. mashed, cooked potatoes
Dash of salt
4 tsp. cinnamon
2 unbaked pie shells

Beat egg whites until stiff. Mix all ingredients except egg whites. Heat until just good and warm, then fold in egg whites. Bake in moderate 350 to 375 degree oven.

Makes 2 pies.
