SWEET POTATO PIE 
2 eggs
1 1/2 c. mashed, cooked sweet potatoes
3/4 c. sugar
1/2 tsp. salt
1 tsp. cinnamon, ground
1 tsp. nutmeg, ground
1 tbsp. butter, melted
1 tsp. vanilla flavoring
1 c. milk
2 tsp. lemon flavoring

Separate egg whites from yolks. Beat egg whites until stiff, set aside. Beat egg yolks well, set aside. Combine egg yolks, sweet potatoes, sugar, salt, spices, flour and butter. Gradually add flavorings, and milk mixing well. Fold in stiffly beaten egg whites. Pour into unbaked pie shell. Bake for 45 minutes at 350 degrees.

If no shell available, place in greased square pan and bake it is delicious.

Mother called it not enough flour for crust.
