REV. J.'S SWEET POTATO PIE 
3 lg. sweet potatoes
1/4 c. butter
1/2 c. canned evaporated milk
2 eggs, separated
2/3 c. sugar
1/2 tsp. salt
1/4 tsp. brandy
3 tbsp. brandy

Boil potatoes in jackets until tender. Peel and mash. Melt butter in milk and add to sweet potatoes, mixing well. Beat egg whites until stiff and set aside. Add yolks and remaining ingredients to potatoes. Fold in egg whites.

Pour into 9 inch unbaked pie shell. Bake at 350 for 30 minutes or until knife comes out clean at the center. When cool, top with ice cream, whipped cream or Cool Whip.
