10 med. sweet potatoes
Sugar to taste
1 lg. can milk
10 eggs
1 lb. butter
2 tsp. lemon extract

Boil potatoes and strain through a ricer. Beat eggs separate them. Beat whites put in freezer. Mix about 1 cup sugar with the potatoes and well beaten yolks. Mix well, add milk (heated) and melted butter.

Mix thoroughly, add egg whites. Continue to stir. Add nutmeg and cinnamon to taste. Bake in 350 degree oven in an unbaked pie shells for 40 minutes.
