CREAM OF BROCCOLI SOUP 
1 1/2 c. chicken broth
1/2 c. chopped onion
1/2 tsp. dried thyme, crushed
1 sm. bay leaf
Dash garlic powder
2 tbsp. butter
2 tbsp. flour
1/4 tsp. salt
Few dashes of white pepper
1 c. milk

In a saucepan, combine chicken broth, chopped onion, thyme, bay leaf and garlic powder. Bring the mixture to a boil. Reduce heat; cover and simmer for the time indicated in the chart or until broccoli is tender. Remove the bay leaf.

Place half the vegetable mixture in a blender container or food processor. Cover and blend 30 to 60 seconds or until smooth. Pour into a bowl. Repeat with remaining vegetable mixture; set all aside.

In the same saucepan, melt the butter. Stir in flour, salt and pepper. Add the milk at once. Cook and stir until mixture is thickened and bubbly. Stir in the blended vegetable mixture. Cook and stir until soup is heated through. Season to taste with additional salt and pepper. Makes 3-4 servings.
