RICE SALAD 
1 c. instant rice
1 c. chopped fresh mushrooms
1/2 c. water
1 c. English peas, frozen
1/2 c. Italian salad dressing
1 c. chopped water chestnuts
1 cucumber, unpeeled and chopped
1/2 c. chopped olives
1 bunch green onions, chopped
Mayonnaise to taste

Boil water and salad dressing and pour over rice. Let stand until rice is tender. Mix cucumber, onions, mushrooms, peas, water chestnuts and olives with mayonnaise and mix in rice mixture. Chill 12 hours before serving.
