SHRIMP-RICE SALAD 
3 c. cooked rice (cooked in chicken broth)
1 lb. cooked shrimp (peeled and deveined)
1 c. sliced celery
2/3 c. mayonnaise
2 tbsp. catsup
1 tsp. lemon juice
1/2 tsp. cream style prepared horseradish
1/2 tsp. prepared mustard
1/8 tsp. hot pepper sauce
Salt and pepper
Salad greens

Combine rice, shrimp, celery and green onions in large mixing bowl. Blend mayonnaise, catsup, lemon juice, horseradish, mustard and pepper sauce. Add to rice. Toss lightly and season to taste with salt and pepper. Chill. Serve on salad greens and garnish with lemon wedges and parsley.
