CREAM CHEESE PIE | |
4 (3 oz.) pkg. Knudsen cream cheese 2 eggs, beaten (room temperature) 1/2 tsp. lemon juice 3/4 c. sugar 2 tsp. vanilla Combine above ingredients and beat until light and frothy. Pour into graham cracker crust and bake in 350 degree oven, 15 to 20 minutes. Remove from oven and allow to cool for 5 minutes, then pour topping over pie. Return to oven and bake 10 minutes longer. Place in refrigerator at least 5 HOURS BEFORE SERVING. VERY RICH. Serves 10 to 12. CRUST: 12 to 14 graham crackers, finely crumbled 1/2 c. butter, melted Combine cracker crumbs and butter thoroughly. Pat into 9 inch pie pan. TOPPING: 1 c. Knudsen-Hampshire sour cream 3 1/2 tbsp. sugar 1 tsp. vanilla Blend sour cream with sugar and vanilla. |
