CREAM CHEESE PIE 
4 (3 oz.) pkg. Knudsen cream cheese
2 eggs, beaten (room temperature)
1/2 tsp. lemon juice
3/4 c. sugar
2 tsp. vanilla

Combine above ingredients and beat until light and frothy. Pour into graham cracker crust and bake in 350 degree oven, 15 to 20 minutes. Remove from oven and allow to cool for 5 minutes, then pour topping over pie. Return to oven and bake 10 minutes longer. Place in refrigerator at least 5 HOURS BEFORE SERVING.

VERY RICH. Serves 10 to 12.

CRUST:

12 to 14 graham crackers, finely crumbled
1/2 c. butter, melted

Combine cracker crumbs and butter thoroughly. Pat into 9 inch pie pan.

TOPPING:

1 c. Knudsen-Hampshire sour cream
3 1/2 tbsp. sugar
1 tsp. vanilla

Blend sour cream with sugar and vanilla.

Since I was a small child, this has been a must at Thanksgiving and Christmas. I am now 64 and this is still a hit with all the youngest members of our family. Just a note...I made this one summer for my husband's company party. Served it with fresh strawberries. Twenty years later got a phone call..." Guess who"' I said not a clue...He said " You made the best cheese pie I have ever had." I knew then who it was. So sweet.

Same exact for me! I'm 64. And it is a must have for the holidays.. when I was young, we love it so much we entered it in our county fair for several years and always won a blue ribbon. One year we dropped the container as we were bringing to the fair.. my sister and I were devastated. It looked like s*** but we entered anyway and it still won. One year my dad had a piece without knowing, and had to make another one for the fair. To this day, now my children's favorite!!!
