QUICHE 
2 eggs
1/2 c. mayonnaise
1 onion (chopped fine)
1/4 c. sliced raw mushrooms
1/4 c. chopped Canadian bacon
1/2 c. milk
1/2 lb. cheese (Swiss, Cheddar, etc.)
1 pie crust
1/2 c. chopped raw spinach

Mix the eggs, milk and mayonnaise until well blended. Add remaining ingredients. Pour into pie crust. Bake for approximately 1 hour at 350 degrees or until golden brown and firm. You can substitute any vegetable or meat to your liking. Let set before cutting. Serves 4-6.
