MOM'S CHICKEN PILAF 
2 tbsp. butter
1 c. uncooked rice
1/2 c. chopped onion
2 c. water
1 (4 oz.) can undrained mushrooms
1/4 c. chopped celery
1/4 tsp. salt
1/4 tsp. pepper
6 pieces frying chicken

Melt butter in large casserole dish. Swish celery, onions, rice around in melted butter. Add water and mushrooms, salt and pepper. Place chicken on top. Cover and bake at 350 degrees for 1 hour or until chicken is done.
