1 sm. potato
1 lb. powdered sugar
3/4 c. peanut butter

Peel, dice and boil potato. When done, mash well and stir in powdered sugar. The mixture should be thick enough to roll out like pie dough. Roll out on wax paper on a board and layer with a layer of peanut butter. Roll up like a jelly roll and slice when chilled. Stir in an airtight container.
