GRANDMA'S POTATO CANDY | |
1/2 med. boiled potato 1 box confectioners' sugar Favorite peanut butter (smooth or crunchy) 1/2 tsp. vanilla Save 1/2 boiled potato from supper. Mash potato and vanilla with fork then add confectioners' sugar until you have formed a fairly stiff dough. Sprinkle confectioners' sugar on a cutting board and smooth some on the rolling pin also. Roll out dough into a long smooth shape. Spread on an even coat of peanut butter. Roll up into a jelly roll, then cut into 1/2" pieces. Arrange on a plate or on waxed paper. Refrigerate 1 hour. |
