HOMEMADE CHICKEN TORTELLINI SOUP
I make different variations of this all the time, I'll add different noodles or more veggies, etc. And its ready in 1 hour.

It'll cure what ever ails ya! I made this when I was brutally sick with a cold and ate it for 2 days straight and felt 100x better!

3 whole chicken breasts
1 (32 oz.) box chicken broth (Swanson)
1 (16 oz.) pkg. tortellini pasta
frozen or fresh spinach (as much or little as you like)
frozen vegetables
3 garlic cloves, minced
1/2 onion, chopped
your choice spices (I use Mrs Dash or Montreal steak spice)
salsa, to taste

Fill medium-large pot 1/2 full of water. Add chicken broth until about 2/3 to 3/4 full. Add onion, garlic, spices and whole chicken breasts and bring to a boil. Boil for 30 minutes or until chicken is cooked. While it is cooking, some of the water will evaporate. I keep adding the rest of the chicken broth to keep it full. Add more spices as you need it.

When chicken is cooked, remove and set aside to cool. Strain the broth to get all the onion and garlic out (optional). Shred/cut up chicken and put it all back into the pot with the broth and a bit of salsa

Note: Be sure to taste broth to figure out if its too spicy or not; then fix it for your taste; if its too spicy I add more water or broth to dilute it.

Bring back to a boil and add vegetables and spinach and let cook for 5 to 10 minutes. Add tortellini and boil until done. Allow to cool and enjoy!

Should serve 4 to 5.
